Serves: 12
1 Cup, whole (143g) Almonds
1/2 cup Macadamias
120 g Coconut (1 1/2 cup)
1/4 cup Flax meal
1/2 cup Sunflower seeds
2 teaspoons cinnamon
1/4 cup coconut oil
Splash vanilla
2-3 tbs Rice Malt Syrup (optional)
1/2 teaspoon sea salt
Blitz up nuts until they are in smaller bits -mix well with coconut, Flax, spices and seeds, salt
Add syrup and vanilla, then remainder of dry stuff. Mix. add melted coconut oil. Mix well.
Place on flat baking tray lined with baking paper. Bake at 180c for 25 mins. Toss it every 8 mins or so (important to stop it burning and so it browns evenly).
Let cool. Store in airtight container.
*you can obviously add dried fruit if that's your thing. It's not mine because dried fruit is really high in carbs!!
